Brett and I did a couple of months in Scottsdale during our "sabbatical" and I visited Phoenix several times during my pre-1995 Teradata stint.

Chino Bandido Takee-Outee - Mexican/Chinese/Caribean food (and Snickerdoodles) - very yummy
Mama's Pizzeria, Tempe - I've not been to this store, but the stores in Bullhead City & Laughlin are FABULOUS!
Waffle House - this is as far West as Waffle House goes (I think).

Campgrounds:

All of my/our Phoenix work was before we bought the RV, so I'm not sure about any campgrounds. Although Destiny has a campground in Goodyear, AZ.
